sensitive throttle on rough land

Anyone got any tips on throttle control when in low ratio on rough land ?
At the moment when crossing rutted fields in low, as I go over the rutts I'm obviously being thrown about with the result of coming on & off the throttle leading to a bit of a kangaroo moment

Do you cross the ruts diagonally? It helps, but can lead to being seasick.

Er.... fit cruise control.......or the poor man's version, a hand throttle! :)
